| 1 Tortilla |
| 2 tablespoons
sour cream |
| 1/4 cup shredded
Cheddar or Jack cheese |
| 1/2 small tomato,
chopped |
| Chopped chives
to taste |
| Salsa to taste

Preparation Time: 5 minutes
Cooking Time: 35 seconds to 1 minute
Oven setting: HIGH
Lay tortilla on a paper plate and spread with sour cream.
Sprinkle cheese on top, then add tomatoes and chives.
Add a spoonful or so of salsa to taste. Fold tortilla
in half. This can be done ahead of time and wrapped
until cooking time, if you wish. Microwave 35 seconds
to 1 minute, or until cheese bubbles around edges. Other
fillings such as cooked leftover meat, refried beans,
chopped black olives, etc., may be added to the quesadilla.
Let stand about 1 minute before eating.
Makes 1 quesadilla. |
