Grated Dry Jack Popovers

3 cups chicken broth
1 cup hot water
1 cup chopped potato
1/2 cup each chopped carrots, celery, onion, and green pepper (vegetables may be chopped in food processor or blender)
1/4 cup butter or margarine
2 cups milk
2 tbs. flour
2 cups shredded Vella Jalapeno Jack Cheese
dash pepper
1 tbs. minced parsley

Pour chicken broth into a large pot and bring to boil.

Add chopped vegetables. Cover and simmer for 1 1/2 hours.

In a small bowl, combine milk and flour and mix until smooth. Stir slowly into hot vegetable broth.

Add cheese, pepper, and parsley, and stir until thickened (about 7 minutes).
Makes 6-8 servings.
