This cheese was originally created in the gold rush days in Monterey, California by a Scotsman named David Jacks, whose name it carries today. Our version is aged a minimum of one month and there is no richer or more delicious Monterey Jack cheese anywhere. It's buttery, creamy texture and taste leaves a clean fresh flavor in your mouth. When cold it slices and grates well for cooking, while at room temperature it becomes almost spreadable. It is available unflavored (Original) or naturally seasoned with Pesto, Garlic, Rosemary, Jalapeno,or Habanero. You can order any of our High Moisture Monterey Jack Cheeses year round in block form. We offer a hand rolled wheel version of all flavors available only during the month of December, while supplies last.
